How do you teach language arts (phonics, spelling, grammar, writing) with notebooking?

I have taught language arts skills (phonics, spelling, grammar, writing) with various curricula over the years.  My strong subject is math, not language arts, so I greatly appreciate the curricula we've used to equip me to teach these skills to my children.  We keep/build notebooks to house the information we've learned from our language arts curricula.  However, it is with our NOTEBOOKING that we actually practice and put these skills to use.
